Making Masala Dosa Batter | How to make Masala Dosa Batter?
You can buy the Masala Dosa Batter from the market. In Indian markets, you can get the readymade batter. You can also prepare at home. Masala Dosa Recipe is as under:
Chana Dal 50 gms
Udad Dal 100gms
Poha 50 gms
Rice 300 gms
Non-Iodized Salt 3 to 5 gms
You can take the quantity and the proportion as per your choice. Just check out if there are some small stones or anything else in the above four things. Put Chana Dal in a Bowl and pour water into it so that Chana Dal gets dipped completely. Add more water to it. Similarly, take Udad Dal and Rice and dip them in sufficient water. Soak all the three things in water for about 5 hours. Before you blend them together, keep Poha soaked in water for 30 minutes. Take Dals, Poha, and salt together and mix them and blend them. Pour some water to make it concentrated slurry. Take the rice pot, decant off the water and mix and blend with the concentrated slurry. Make it a little bit coarse so that it may not become like Maida.
Ferment this mixture for 7 to 12 hours. The Masala Dosa Batter is ready for use.
Potato Masala for Dosa | How to make Potato Masala for Dosa?
Oil – 1 Table Spoon
Mustard – 10 grams
Water Soaked Udad Dal – 20 grams
Water Soaked Chana Dal – 15 Grams
Jeera – 5 Grams
Ginger, Garlic, Green Chilli, Onions, Tomatoes, Carrot, Peas
Curry Leaves – 1 Sprig
A Few Coriander Leaves
Boil a Few Potatoes, peel off and cut them into small pieces. Put oil in the Pan and heat it. Add Mustard, Udad Dal, Chana Dal to heated oil. Heat it till the dal gets golden. Add Ginger, Garlic, Green Chilli, and heat again. Add onions and heat. Add Peas, Carrot, Curry Leaves, Turmeric, Salt, Coriander Leaves. After mixing and heating for a few minutes, add the Cot boiled Potatoes to the mixture and stir it completely. You can add a little bit of water if required. The Potato Masala for Dosa is Ready.

Grated Fresh Coconut 50 Grams
Broken Udad Dal 10Grams
Roasted Chana Dal 10 Grams
Almonds 10 Grams
Olive Oil 1-2 Teaspoons
Dry Red Chillies
Add Freshly Grated Coconut, Green Chillies, Ginger, Curry Leaves, Chana Dal, Almonds, Salt to the Mixer Grinder and make a smooth paste.
Put oil in the pan and heat it. Add Mustard seeds, Udad Dal, Curry Leaves, Red Chillies. Mix the two mixtures together and the Coconut Chutney is Ready.
Sambar Recipe | How to make Sambar?

Broken Udad Dal
Freshly Grated Coconut
Ingredients for making Sambar
Water soaked Chana Dal
Small Cut Onions
Red Chilli Powder
Ingredients for Tadka
Heeng 1-2 gms
Add Chana Dal, Broken Udad Dal, Red Chillies to the pan just to roast them without oil. Stir for a few minutes till the dals get golden. After a few minutes, add freshly grated coconut and heat for a few minutes. Take this mixture in a grinder and make a coarse Sambar powder. Sambar Powder is Ready. Or you can buy readymade Sambar masala from the market.
Now add Water Soaked Chana Dal in a cooker and all the vegetables and all the spices such as Red Chilli Powder, Turmeric Powder, and water and boil for some time. Go for two whistles and add Sambar Powder to it. The Sambar is Ready. You can add other things according to your taste.
For Tadka, put oil in a pan. Add Mustard Rai, heat it. Add Heeng, Red Chillies, Curry Leaves to it and heat. Add some sambar heat. Add rest of the sambar to it and the sambar is ready.
